Ingredients
1kg mince
1 onion
3 cloves garlic
Herbs (dill, parsley, mint)
2 tablespoons hoisin sauce
1 teaspoon soy sauce
Chilli flakes
½ pumpkin
Cumin
Coriander powder
Curry powder
Purple cabbage
Red onion
Spinach
Grated carrot
Method
Mix the onion, garlic, herbs, hoisin sauce, soy sauce and chilli flakes with the mince and put in the fridge
Cut the pumpkin up, coat with cumin, coriander and curry powder then roast in oven at 180C for 35 minutes
Fry mince in a pan while breaking it up until the liquid evaporates
Slice cabbage, red onion, spinach and carrot, combine in a bowl then mix roasted pumpkin through
Pop salad on plate and add a big scoop of mince
Blitz all in blender to make a quick dressing:-
2 tablespoons Greek yoghurt
Dill/coriander/parsley
1 teaspoon wholegrain mustard
2 cloves garlic
Jalapenos (optional)
½ teaspoon chilli powder
Squeeze of lemon juice or cap full of any vinegar
Pepper and salt
Top salad and mince with dressing
